Nargisi Meat Kofta

Ingredients:
Minced meat (keema) 500gms
Eggs 5
Bengal gram powder (Besan) 100gms
Onions 50gms
Chilly powder 1 tea spoonful
Coriander powder 3 tea spoonful
Chilly (red) whole 5
Turmeric powder ½ tea spoonful
Garlic 10 glakes Ginger 2”pieces
Cumin seeds 1 tea spoonful
Cardamoms 4
Cloves 10
Pepper corn 15
Coriander leaves few
Garam Masala powder ½ tea spoonful
Vanaspati 150gms
Salt to tate
Water 500ml

Preparation: Full boil 4 eggs, peel and cut each into halves. Grind half of onions, garlic and half of ginger into a paste. Chop remaining onions.

Method: Put minced meat, Bengal gram (Besan), whole red chilly, common seeds, peppercorn, 5 cloves and cardamoms, ginger and salt in cooker and add 250ml water. Now close the lid and put the cooker on maximum heat, bring it to full cooking pressure, reduce the heat and heat and cook for 10 minutes. Open immediately. Heat it to evaporate the remaining water. Take out cooked material and grind to a paste. Break one egg in it and mix it. Now take boiled egg pieces and wrap them with this paste so as to make round balls. Heat vanaspati and fry these till brown. Remove them and keep aside.

Heat some more vanaspati in cooker body and fry chopped onions till pink. Add 5cloves, cardaoms and bayleves. Add paste of garlic onions add chilly, coriander and turmeric powder and fry till vanaspati leves masala , now add 150ml of water and boil it. Put meat egg balls (Nargisi Koftas) in it and cover. Sprinle garam masala it with coriander leaves. Serve.

Chicken / Mutton Soup

Ingredients:

Chicken/mutton
Minced 400 mgs
Tomatoes 100 gms
Onions 100 gms
Celery 1 spring
Cumin seeds ½ tea spoonful
Pepper Powder ½ tea spoonful
Butter 50 gms
Salt to Tate
Water 800 ml

Preparation: Chop onions, tomatoes, carrots and celery into fine pieces and mix, them with small chicken pieces minced meat and egg.

Method: Put the above prepared mixture of vegetables, chicken/mutton and egg in the cooker body along with water and a pinch of salt, close the lid and bring on full cooking pressure by putting on maximum heat. Reduce the heat and cook for 15 minutes. Allow to cool on its own and open: Mesh vegetable and remove bones from chicken pieces. Add pepper powder and vinegar, filter with the help of a sieve. Heat ghee in pan and fry cumin seeds and cloves and season the soup with it. Serve.

The Tomato soup

Ingredients:

Tomatoes 500gms.
Ginger 1” piece
Onions 100gms.
Celery 1 spring
Cumin seeds ½ tea spoonful
Pepper power ½ tea spoonful
Butter 50gms.
Salt to Tate
Water 800 ml.

Preparation: Cut tomatoes, ginger, onions and celery into very small pieces.

Method: Put pieces of tomatoes, ginger, onions, celery into cooker body with water and salt, close the lid and place it on maximum heat. Bring to full pressure and then reduce the heat. Cook for 10 minutes. Allow the cooker to cool its own and then open. Mesh the pulp of vegetable and filter it through a sieve. Add pepper powder. In a pan heat butter and fry cumin seeds and season the soup with it. Serve.

Chocolate Pudding

Chocolate Pudding

Ingredients:

Milk 500 ml.

Chocolate (cooking) 30 gms.

Egg 4

Corn flour 4 tea spoonful

Butter 25 gms.

Sugar 150 gms.

Water 300 ml.

Preparation: Boil the milk and let it cool. Make a thin paste of chocolate, corn flour and sugar with half cup of water and this to the milk. Stir well. Beat the eggs pour them in milk. Keep on stirring. Grease the separator with butter and put this milk mixture into it.

Method: Place grid in cooker body and pour water in it. Cover the separators tightly and place it on grid, close the lid and place it on maximum heat. Cook for 50-20 minutes after full pressure is reached and then allow cooling on its own. Open and remove the separator, from cooker body. Please it in deep freezer to chill it. Serve.

Potato curry

Ingredients;

Half kilo potatoes
Hundred gram tomatoes
Five green chilies
One teaspoon chili powder
Half teaspoon turmeric powder
Two teaspoon coriander powder
Half teaspoon fenugreek
Half teaspoon jeera
One pinch asafetida
Two tablespoon oil

Process;

First take the potatoes boil them and cut in small pieces then also cut chilies and tomatoes then take pan put oil and heat it then put fenugreek, jeera and asafetida in it and splutter put tomatoes, potatoes, chilies and total masala add water and stir it properly then cook all items for ten to twelve minutes your potato curry is ready serve it.

ingredients;

Half cup grated coconut
Small pieces of ginger
Three small onions
Three pods garlic
One fourth teaspoon jeera
Three no dry red chili
One fourth teaspoon turmeric
One liter Butter or curd one
Half teaspoon fenugreek
Curry leaves

Process;
Take garlic, jeera, coconut, turmeric and grind it and make fine paste through it then take milk and mix it with butter and put salt depends on taste place this it on a low flame stir it until the milk become hot then take pan and put oil when oil become warm spray mustard seeds in it then put ginger and onion which are finely chopped wait until they become brown in color then put red chili and fenugreek in spluttering time put curry leaves keep it away from the heat then put butter milk in it.

Aloo Chat recipe

Components

6 peeled potatoes
1 spoon red chilli powder
2 spoon roasted cumin powder
2 spoon chat masala
Chutney mint
Chutney tamarind
For garnish chopped coriander leaves
Other option for garnish and increase taste tomato julienne, chopped onion, fresh pomegranate seeds oil for frying.

Method of making aloo chat

First off all you must make aloo bharta and then make samosa or make aloo tikkiya and also make matar. For taste you must make sour and sweet chatni. And mixed it on hot tawa then mixed small onion pieces sweet and sour chatni then after serve it.

Banana Chips
Ingredients;

Banana one dozen
Oil one kg
Turmeric one pinch
Salt depend on taste

Process;

First Take deep pan put oil in it and heat it then take banana and cut into round slices wait until the boiling of oil then put turmeric in boiling oil then stir it properly then put round banana pieces in to a boiled oil till they become crispy then remove it from the oil and spray salt depends on taste then keep these chips in an air tight jar.

Ingredients;

One fifty gram Cucumber
Five green chili
One teaspoon Mustard
One cup coconut ground
One fourth liter curd
Two table spoon coconut oil
Dry chili
Curry leaves
Salt depends on taste

Method;

First take cucumber cut it into small pieces then cook with water and salt then grind green chili and add it with cucumber cook it for five minutes and put curd slow down the flame of gas and stir it properly keep it away from heat then season it with dry chili, curry leaves and mustard.

EGG CHAAT

Ingredients:
(1) four eggs
(2) jaggery one teaspoon
(3) tamarind paste one teaspoon
(4) one teaspoon chat masala
(5) third fourth teaspoon red chili powder
(6) one fourth cup tomato sauce
(7) two tablespoon chopped coriander leaves
(8) three green chilies
(9) two no onion
(10) salt depends on paste

Process;
First take the eggs and boil it then chop green chilies, eggs and onions, take pan and boil tamarind paste and jaggery in little water stir properly until it become thick then put all things also salt depend on taste cook well your egg chaat is ready serve it hot.
