Indian recipe – Lady’s Finger Pakoda

Many types of pakodas are available in Indian streets and hotels. But they hardly make this item. Let us cook it.

Ingredients

4 to 7 lady’s fingers

1 to 2 cups of gram flour [besan]

One tsp turmeric powder

Half tsp ajwain

A pinch of baking soda

A pinch of asafetida

A pinch of red chili powder

Salt to taste

Cooking oil or pure ghee for deep frying

To accompany – onion, green chili, mooly, tomato salad, pickles etc

Process

Clean the lady’s fingers with clean wet cloth. Remove both the ends of it and cut in 2 to 3 pieces. Mix turmeric powder, ajwain, soda, asafetida, red chilly powder and salt in besan. Add little water to make a semi thick paste of it. Leave it to set for 20 minutes. Heat the pure ghee or oil in a stew pan. Dip three pieces of lady’s fingers in besan paste. Drop each piece separately one by one in hot cooking medium, deep fry until golden brown. Now three pakodas are ready to eat. Taste one Pakoda, it must be tasty. In this way complete the cooking. Also make 4 pakodas of punctured green chilies to accompany. Serve hot with onion, curd, salad etc.

AALOO BANDA (Potato Bonda)

Take 250 to 400 grams of gram flour (besan), mix small pinch of baking soda, half tsp. ajwain, half to one tsp. salt, water as little as possible make a thick paste of it by churning it round, again again.Boil 6 to 12 potatoes of medium size uncover then crush them. Chop 2 to 4 onions of medium size, 50 grams ginger, 5 green chilies, and 100 grams fresh coriander leaves.

Now fry in a kadhai- onion, chilies, ginger, coriander leaves with turmeric powder 1 tsp., mustard seeds 1 tsp., coriander powder 2 tsp.,curry leaves25, 10 cardamom, 20 black pepper etc. in about 100 grams pure ghee or cooking oil, then mix crushed potatoes in this make dry sabji of it by heating mixing process in kadhai. Taste it. It must be very tasty. Now give rest to your self for 5 to 15 minutes let the potato sabji cool down. Mean while have a cup of tea, coffee or coke, pepsi. You can use this sabji with any other preparations also. Make small pedas of all the sabji. Take about one liter pure ghee or cooking oil in another kadhai, heat it up. Take 5 to 8 pedas of sabji at a time dip one by one in above besan paste drop each in too hot cooking medium by hand, spoon or some thing else. Deep fry until golden brown. Serve hot with chopped onion, curd, tomato sauce, pickles, chutneys, salad etc.
